If you've been looking for the perfect recipe to add to your summer rotation this is it! The heat and tang from the peppers, paired with the creamy cheese blend and salty bacon is a treat for your palate. Whether you're looking for a quick snack or a party appetizer, jalapeno poppers are always a hit.

I'm all about keeping things simple and jalapeno poppers are great for that, just a few ingredients and minimal clean up required! Grab some jalapenos, cream cheese, WW Homestead Dairy mild cheddar, bacon, and a few seasonings. You'll also need a cutting board, sharp knife and a baking sheet.
Making jalapeno poppers is a straightforward process. If you've never done it before you'll be happy with how easy it is! Slice your peppers in half and remove the seeds and membranes. If you enjoy the spicier side of life you can leave some of the seeds and membranes. Then you'll stuff your peppers full of your cream cheese, cheddar and bacon mix. After that there ready for the oven, cook them until they are melty, crispy and ta-da! The perfect jalapeno poppers.

6-8 servings     ~    Prep Time: 25 min     ~     Total Time: 40 min

Ingredients:
  • 12 jalapeno peppers
  • 2 cups shredded mild cheddar
  • 4 oz cream cheese, softened
  • 6 slices of bacon, cooked & crumbled
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • green onions or chives, topped
Directions:
  1. Preheat oven to 400°
  2. Cut jalapenos peppers in half lengthwise. Use a spoon or knife to scrape out seeds and membranes (leave a few if you like a little more heat). Set peppers aside.
  3. Mix together shredded cheese, cream cheese, bacon and seasonings.
  4. Fill each pepper half with cheese mixture. Try to keep mixture level with the top of each pepper so that during baking they do not bubble over. Place each pepper on a baking sheet.
  5. Bake until tops are bubbling and golden brown, about 15 minutes. Remove from oven.
  6. Garnish with chopped green onions or chives.
  7. Use any extra cheese mix as a dip or sandwich spread.
